Summer temperatures are here! What does that mean? Time for summertime fun right? Warmer weather, outdoor activity, and recipes to enjoy in the heat. Getting outdoors is a must in the summer and whether it be swimming, biking, walking outdoors and enjoying beautiful nature, summer is a great time to get creative and try new things.

Get inspired and come up with some creative recipes. Some fun summertime recipes include:

 

Summer Shish Kabobs– Buy shish kabob sticks (long sticks) and put shrimp, chicken, firm tofu, or steak on them. You can add peppers, onions, and different vegetables such as mushrooms, zucchini, cherry tomatoes. You can add some spice by using crushed red pepper flakes, chopped parsley, large red onions, green and red bell peppers and really enjoy it!

 

Protein Popsicles – What better source of protein then protein fun in a popsicle. Perfect for lounging out by the pool, sitting in the shade or just enjoying at home for a quick, healthy summertime treat. Using Unicity Vanilla or Chocolate Complete Protein, unsweetened almond or coconut milk, Greek Plain Yogurt in an ice cube tray with toothpicks or a larger popsicle type tray. Freeze, relax and enjoy!

 

Fruit and/or Veggie Platter- Create your own fruit platter or veggie platter. What to include: Get a fancy plate and chop up some great low glycemic fruits such as: apples, apricots, blackberries, blueberries, strawberries, cherries, coconut, grapes, kiwi, nectarines, oranges, peaches, pears, plums, and raspberries.

 

Chickpea Pita– Fill a pita pocket with chickpeas- a good source of protein, cucumber, tomatoes, onions and spinach. Add a side of hummus and enjoy!

 

The most important thing is that we get outdoors and become one with nature. Doing your best to get a walk in early morning or late afternoon, rather than mid-day when temperatures are at their peak, is essential. When we ground with nature, we feel better and align our mind, body and soul. Incorporating in fun with some cool, easy recipes, plus being active daily is very helpful on our journey in becoming our best self.
